It’s quite difficult to choose a favourite, as I enjoy all types of cheese. 😀 But if I had to pick: from soft cheeses, it would be Brie; from blue cheeses – Gorgonzola; for fresh cheese – Ricotta; and from hard cheeses – definitely Parmesan.
