If I had to choose only one vitamin to get from food, the most important would probably be Vitamin D ☀️.
Why Vitamin D?
It helps the body absorb calcium, which keeps bones and teeth strong.
It supports the immune system, helping the body fight infections.
It plays a role in muscle function and mood.
Another reason is that Vitamin D is harder to get from many foods compared to other vitamins. Our bodies mainly produce it when our skin is exposed to sunlight, but food sources are more limited.
If I could only get one vitamin exclusively from food (meaning no supplements, no sun for D, etc.), I’d choose vitamin B12 (cobalamin).
Why B12?
It’s essential and not made by the body at all—humans rely 100% on diet (or bacteria in animal guts/fortified foods). Unlike vitamin D (which your skin can produce with sunlight) or vitamin C (easy from plants), B12 has no reliable non-diet backup.
Deficiency hits hard and fast in the long run: It causes pernicious anemia, irreversible nerve damage (tingling, numbness, memory issues, balance problems), fatigue, mood disorders, and even brain/spinal cord problems if untreated. Symptoms can mimic aging or neurological diseases.
It’s harder to get consistently from food for many people:
Primarily in animal products (meat, fish, eggs, dairy)—vegans/vegetarians are at high risk without fortification.
Absorption drops with age (common after 50), gut issues, or certain meds.
Unlike widespread deficiencies in D (very common indoors/low-sun areas) or A (big in developing countries), B12 deficiency can sneak up and cause permanent harm before obvious signs.
Other vitamins have broader food sources or less catastrophic solo-deficiency effects:
Vitamin C → Scurvy is bad but rare in modern diets (citrus, peppers, etc.).
Vitamin D → Bones weaken, but sun exposure helps many.
Vitamin A → Eye/immune issues, but liver, carrots, greens cover it.
B vitamins generally → Overlap a lot (energy, nerves), but B12 stands out for its unique absorption and animal-only natural sources.
In short: B12 is the one where skipping food sources (or poor absorption) leads to the most irreversible damage without an easy workaround. Experts often flag it as a top concern for vegans, older adults, and those with gut problems—exactly why it’s the “one vitamin” many say is worth prioritizing if forced to choose.
